The effect was clarified of the design parameters on heat transfer an impingement steam jet applied to continuous liquid food sterilization with aim high heating performance. study investigated effects and water Reynolds number, jet-to-target spacing diameter ratio, temperature Nusselt number. number defined based injection plate configurations in turbulent flow. at 120 °C greater than 125 130 higher noted a nozzle two. highest ratio (H/d) 1 then tended be constant for H/d above 3. present compared correlations from Huber Viskanta, Martin. In addition, Ranz Marshall correlation conventional direct method. increase as nozzles increased while product decreased.
